These muffins are always a hit with the entire family. It never fails there are always old bananas on the counter waiting to be eaten. This puts those old bananas to use instead of to waste. See below for the recipe!
1 1/4 cups sugar
1/2 cup butter softened
1 1/2 cups very ripe bananas (3 large or 4 medium)
1/2 cup milk
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
Heat oven to 350 degrees and put muffin papers in muffin tins. Makes 12 -18 depending on the size.
With stand mixer or hand mixer mix sugar and butter. Add eggs, bananas, milk and vanilla, mix until smooth.
Then add the combined dry ingredients of flour, baking soda and salt.
Scoop batter into cups 2/3 full.
Bake for about 18-22 minutes.
Eat warm with butter!
