Cara’s Potato Soup Recipe


  • 6 slices of bacon cooked and diced (save the grease to use in the roux about 3 tbls)
  • 1/3 cup of flour for the roux
  • 1 medium onion
  • 2 1/2 cups of chicken stock or broth
  • 2 cups of warmed milk
  • about 1 1/2 – 2 lbs of peeled potatoes diced
  • 2 spoonfuls of sour cream
  • shredded chedder cheese
  • salt, pepper and parsley flakes to taste


Cook the bacon in the pot you are going to use, move the pot from the burner or turn off the gas, remove the bacon and reserve the grease.  Chop everything.  Cook the chopped onion in the bacon grease until tender, then add the flour stir until all the flour is mixed well then gradually add the chicken broth and whisk.  Gradually add the milk, potatoes and bacon stirring frequently.  Continue cooking until desired simmer, but do not let rapid boil (it will get too thick).  Reduce the heat to low and let simmer for 20 minutes stirring often.  When the potatoes reach the desired tenderness then add the sour cream, salt, pepper, parsley flakes and cheese and mix together.
